Slow Cooker Pea and Ham Soup

Ingredients:
1 pound dried split peas, rinsed and drained
1½ pounds cooked ham, diced or chopped
1 medium onion, finely chopped
2 carrots, peeled and diced
2 celery stalks, diced
3 cloves garlic, minced
6 cups chicken or vegetable broth
2 cups water
1 bay leaf
½ teaspoon dried thyme
½ teaspoon black pepper
Salt, to taste
1 tablespoon olive oil
Instructions:
Rinse the dried split peas thoroughly and remove any debris. Add them to the slow cooker along with the diced ham, onion, carrots, celery, and garlic.
Pour in the broth and water, then add the bay leaf, thyme, black pepper, and olive oil. Stir gently to combine.
Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the peas are tender and the soup has thickened.
Remove the bay leaf and taste the soup. Adjust the seasoning with salt and additional pepper as needed.
If a smoother consistency is desired, lightly mash some of the peas with a spoon or use an immersion blender briefly.
