Cheesy Bacon & Ground Beef Casserole Bake

Ingredients

For the Casserole

  • 2 lbs (900g) ground beef
  • 6 medium potatoes, peeled and diced
  • 8 slices bacon, cooked until crispy and crumbled
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil

For the Creamy Sauce

  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • ½ cup milk
  • 1 teaspoon Dijon mustard (optional)
  • ¼ teaspoon black pepper

Garnish

  • Chopped parsley
  • Extra crispy bacon bits

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium-high heat. Add the diced potatoes and cook for about 8 minutes until they begin to soften. Remove and set aside.
  3. In the same skillet, cook the bacon until crispy. Transfer to a paper towel-lined plate, then crumble.
  4. Cook the onion until softened, about 4 minutes. Stir in the garlic and cook for another minute.

  10. Spread the remaining sauce over the top and finish with the remaining cheddar and mozzarella cheeses.
  11. Cover with foil and bake for 35 minutes.
  12. Remove the foil and bake another 15–20 minutes, or until the cheese is melted, bubbly, and beautifully golden brown.
  13. Let the casserole rest for 10 minutes before slicing.
  14. Garnish with fresh parsley and extra bacon bits before serving.
