For the Casserole
- 2 lbs (900g) ground beef
- 6 medium potatoes, peeled and diced
- 8 slices bacon, cooked until crispy and crumbled
- 1 medium onion, diced
- 3 cloves garlic, minced

Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Heat olive oil in a large skillet over medium-high heat. Add the diced potatoes and cook for about 8 minutes until they begin to soften. Remove and set aside.
- In the same skillet, cook the bacon until crispy. Transfer to a paper towel-lined plate, then crumble.
- Cook the onion until softened, about 4 minutes. Stir in the garlic and cook for another minute.
- Add the ground beef and cook until browned. Drain excess grease if necessary.

- In the prepared baking dish, layer half the potatoes, followed by half the beef mixture, a sprinkle of bacon, and a little sauce. Repeat the layers.
- Spread the remaining sauce over the top and finish with the remaining cheddar and mozzarella cheeses.
- Cover with foil and bake for 35 minutes.
- Remove the foil and bake another 15–20 minutes, or until the cheese is melted, bubbly, and beautifully golden brown.
- Let the casserole rest for 10 minutes before slicing.
- Garnish with fresh parsley and extra bacon bits before serving.
