Baked Chicken with Zucchini + Cherry Tomatoes

🛒 Ingredients

  • 4 chicken thighs or boneless, skinless chicken breasts
  • 2 medium zucchini, sliced into rounds
  • 1 cup cherry tomatoes, halved
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 tablespoon chopped fresh parsley or basil (for garnish)

👩‍🍳 Instructions

1. Preheat the Oven

  • Preheat your oven to 400°F (200°C).
  • Lightly grease a 9×13-inch baking dish.

2. Season the Chicken

  • Pat the chicken dry with paper towels.
  • Rub with olive oil, garlic, Italian seasoning, paprika, onion powder, salt, and black pepper.

3. Assemble

  • Arrange the chicken in the baking dish.
  • Scatter the zucchini slices and cherry tomatoes around the chicken.
  • Drizzle the vegetables with a little olive oil and season lightly with salt, pepper, and a pinch of Italian seasoning.

4. Bake

  • Bake for 25–30 minutes, or until the chicken is nearly cooked through (165°F/74°C internal temperature).

5. Add the Cheese

  • Sprinkle the mozzarella and Parmesan evenly over the chicken and vegetables.
  • Return to the oven for 8–10 minutes, until the cheese is melted, bubbly, and lightly golden.

6. Serve

  • Garnish with fresh parsley or basil.
  • Serve hot with rice, mashed potatoes, pasta, or crusty bread to soak up the delicious juices.
