This simple yet delicious root vegetable bake was taught to me by an older Amish woman, and it has quickly become a go-to recipe for spring dinners. With just four ingredients, it’s easy to prepare and packs a lot of flavor. Here’s how to make it:
Ingredients:
- 4 large carrots, peeled and cut into chunks
- 4 medium potatoes, peeled and cut into cubes
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Preheat your oven to 400°F (200°C).
- Place the cut carrots and potatoes in a baking dish.
- Drizzle the olive oil over the vegetables and toss them well to ensure they’re evenly coated.
- Sprinkle with salt and pepper to taste.
- Roast in the oven for about 30-40 minutes, or until the vegetables are tender and lightly browned, stirring halfway through.
- Remove from the oven, serve, and enjoy!
This root vegetable bake is a perfect side dish to accompany any main meal, and it’s packed with natural sweetness and savory goodness.
