Healthy and Hearty Winter Soup

INGREDIENTS:

  • 1 lb ground beef (or turkey for a leaner version)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 carrots, chopped
  • 1 1/2 cups uncooked rice (white or brown)
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef or vegetable broth
  • 2 cups water
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

INSTRUCTIONS:

  1. Cook Ground Meat: In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned. Drain excess fat if necessary.
  2. Sauté Vegetables: Add the chopped onion, garlic, bell pepper, and carrots. Cook for 5-7 minutes until the vegetables begin to soften.
  3. Add Tomatoes and Seasoning:Stir in the diced tomatoes, basil, oregano, salt, and pepper. Let it simmer for a couple of minutes.
  4. Add Rice and Liquid: Pour in the broth and water, then add the uncooked rice. Bring the mixture to a boil.
  5. Simmer: Reduce the heat, cover the pot, and let the soup simmer for about 25-30 minutes, or until the rice is tender and the soup thickens.
  6. Serve & Enjoy: Taste and adjust seasonings if needed. Serve hot and enjoy this hearty, comforting soup!
