Healthy and Hearty Winter Soup
INGREDIENTS:
- 1 lb ground beef (or turkey for a leaner version)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 carrots, chopped
- 1 1/2 cups uncooked rice (white or brown)
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef or vegetable broth
- 2 cups water
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
INSTRUCTIONS:
- Cook Ground Meat: In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned. Drain excess fat if necessary.
- Sauté Vegetables: Add the chopped onion, garlic, bell pepper, and carrots. Cook for 5-7 minutes until the vegetables begin to soften.
- Add Tomatoes and Seasoning:Stir in the diced tomatoes, basil, oregano, salt, and pepper. Let it simmer for a couple of minutes.
- Add Rice and Liquid: Pour in the broth and water, then add the uncooked rice. Bring the mixture to a boil.
- Simmer: Reduce the heat, cover the pot, and let the soup simmer for about 25-30 minutes, or until the rice is tender and the soup thickens.
- Serve & Enjoy: Taste and adjust seasonings if needed. Serve hot and enjoy this hearty, comforting soup!
