French Onion Stuffed Chicken

Ingredients:

4 large boneless, skinless chicken breasts

2 large onions, thinly sliced

2 tbsp unsalted butter

1 tbsp olive oil

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

1 cup beef broth

1 cup shredded Gruyère or Swiss cheese

1 tsp garlic powder

1 tsp onion powder

Salt & black pepper to taste

2 tbsp all-purpose flour (optional, to thicken)

Fresh parsley, chopped (garnish)

Directions:

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, melt butter & olive oil over medium heat. Add onions, cook slowly 20–25 min until golden.
  3. Stir in thyme & beef broth, simmer 5 min. (Optional: whisk in flour & cook 2–3 min to thicken.)
  4. Cut a pocket in each chicken breast. Season inside & out with garlic powder, onion powder, salt & pepper.
  5. Stuff with caramelized onions & cheese. Secure with toothpicks.
  6. Sear chicken in an oven-safe skillet, 2–3 min per side until golden.
  7. Spoon remaining onions & sauce over chicken. Bake 20–25 min or until chicken reaches 165°F (74°C).
  8. Garnish with parsley & serve hot.
