Crispy Schnitzel with Mashed Potatoes & Gravy

 Crispy Schnitzel with Mashed Potatoes & Gravy

 Serves: 2–3

 Time: ~45 minutes

 INGREDIENTS

For the Schnitzel:

  • 2 large chicken breasts or pork cutlets
  • Salt & black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ cup flour
  • 2 eggs (beaten)
  • 1½ cups breadcrumbs
  • Oil for frying

For the Mashed Potatoes:

  • 4 medium potatoes
  • 2 tbsp butter
  • ¼–½ cup warm milk
  • Salt & pepper

For the Brown Gravy:

  • 2 tbsp butter
  • 2 tbsp flour
  • 1½ cups beef or chicken broth
  • ½ tsp black pepper
  • Optional: ½ tsp soy sauce or Worcestershire sauce

 INSTRUCTIONS

 Prepare the Schnitzel

  1. Slice chicken in half horizontally.
  2. Cover with plastic and pound thin.
  3. Season with salt, pepper, garlic powder & paprika.
  4. Coat in:
    • Flour → Egg → Breadcrumbs
  5. Fry in medium-hot oil for 3–4 minutes per side until golden.
  6. Drain on paper towel.

 Make the Mashed Potatoes

  1. Boil peeled potatoes in salted water until soft.
  2. Drain and mash.
  3. Add butter & warm milk.
  4. Season with salt & pepper until creamy.

 Prepare the Gravy

  1. Melt butter on medium heat.
  2. Add flour and whisk 1 minute.
  3. Slowly add broth while whisking.
  4. Simmer until thick.
  5. Add pepper and soy/Worcestershire if using.

 TO SERVE:

  • Place schnitzel on plate
  • Add mashed potatoes
  • Pour hot gravy over both

 OPTIONAL EXTRAS:

  • Add mushrooms to gravy
  • Serve with pickles or salad
  • Sprinkle schnitzel with lemon juice
