Carrots are full of vitamins, minerals, and fibers that are good for your health. One medium carrot has only 25 calories. Carrots are a healthy alternative to carbs and complement almost any meal. My favorite way to roast carrots is in the air fryer. I just love how they turn out crispy outer with gorgeous charred edges. My kids are obsessed and my whole family loves air fryer roasted carrots. The only way we enjoy carrots lately.
Ingredients
You only need 10 minutes and three ingredients– carrots, oil, and salt + seasoning of your choice, to make this crispy, crunchy, addictive carrot chips, carrot fries, or carrot slices. Choose Your Carrots
You can use regular carrots, which provide that satisfying snap and vibrant color, or the convenience of baby carrots. Remember that uniform sizes will cook more evenly. Organic carrots are also preferred because they tend to have a sweeter taste and more of the ‘carroty’ aroma that’s desirable.
Oil and Seasonings
A high smoke point oil like canola, grapeseed, avocado or extra virgin olive oil works best in the air fryer. When it comes to seasoning, simplicity is often the best approach. A sprinkle of salt and pepper can do wonders, but I also love adding paprika, garlic powder, or a pinch of cumin. They bring out different dimensions of the carrot’s natural sweetness.
How to Cook Carrots in the Air Fryer
First, you peel carrots and cut them into the desired shape. You can cut them into 2-inch chunks. Slice them thinner into “French-fry” shape sticks. You can also use baby carrots and slice them in half lengthwise.
Place carrots in a bowl and coat them with oil and seasoning. Using basting and pastry brush, toss carrots until well coated.
Lightly grease the air fryer basket or tray with spray oil.
Arrange the carrot slices in a single layer on the air fryer cooking basket or tray. Give them some space so they do not overlap.
Air fry mode (air crisp) at 375-400F (200C) for 6 minutes.
Open the air fryer, flip each carrot (or give them a “shake”), and air fry for another 4-5 minutes or until golden brown and caramelized crispy edges.
Taste and lightly salt, if desired, and season with fresh parsley.

What Other Spice Mix or Seasoning Can I Use for Carrots?
I used three simple ingredients to roast the carrots. I feel like the more spice I add, the more I may lose on the real taste of carrots. You can add the seasoning of your choice. Cook them sweet or savory. Here are a few ideas to kick things up a notch:
For sweetened air fryer carrots, use coconut oil, brown sugar, cinnamon, Chinese Five Spice, or any other spice you like, such as nutmeg, or cardamom.
For another great savory flavor of roasted carrots, you can use cumin and coriander powder with pepper and salt as a seasoning.
Use honey and chili for a sweet-spicy kick.
Be sure to balance your spices with salt and oil. Remember, less is more—you can always add more seasoning after they cook, but you can’t take it away.
