Ingredients:
- 4 large sweet potatoes, peeled and cubed
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs, beaten
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3 cups mini marshmallows
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Place the sweet potatoes in a large pot and cover with water. Bring to a boil and cook for 15–20 minutes, or until fork-tender.
- Drain the sweet potatoes and mash until smooth.
- Stir in the melted butter, brown sugar, granulated sugar, eggs, milk, vanilla extract, cinnamon, and salt until well combined.
- Spread the sweet potato mixture evenly into the prepared baking dish.
- Bake for 25 minutes.
- Remove the casserole from the oven and evenly sprinkle the mini marshmallows over the top.
- Return to the oven and bake for an additional 10–15 minutes, or until the marshmallows are golden brown.
- Let the casserole rest for 5 minutes before serving.
