Sweet Potato Casserole with Marshmallows

Ingredients:

  • 4 large sweet potatoes, peeled and cubed
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs, beaten
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 cups mini marshmallows

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Place the sweet potatoes in a large pot and cover with water. Bring to a boil and cook for 15–20 minutes, or until fork-tender.
  3. Drain the sweet potatoes and mash until smooth.
  4. Stir in the melted butter, brown sugar, granulated sugar, eggs, milk, vanilla extract, cinnamon, and salt until well combined.
  5. Spread the sweet potato mixture evenly into the prepared baking dish.
  6. Bake for 25 minutes.
  7. Remove the casserole from the oven and evenly sprinkle the mini marshmallows over the top.
  8. Return to the oven and bake for an additional 10–15 minutes, or until the marshmallows are golden brown.
  9. Let the casserole rest for 5 minutes before serving.
