Southern Egg Gravy
Ingredients
4 large eggs
2 tbsp butter
2 tbsp all-purpose flour
2 cups milk
1/2 tsp salt
1/2 tsp black pepper (plus extra for topping)
1/4 tsp garlic powder (optional)
1/4 tsp onion powder (optional)
4 biscuits (split and warmed)
Instructions
Boil the eggs until fully cooked, about 10 minutes. Cool, peel, and chop into small pieces.
In a skillet over medium heat, melt the butter. Stir in the flour and cook for 1–2 minutes to form a smooth roux.
Gradually whisk in the milk, stirring constantly to prevent lumps. Cook until the mixture thickens into a creamy gravy.
Add salt, black pepper, garlic powder, and onion powder. Mix well.
Gently fold in the chopped boiled eggs and let everything heat through for 2–3 minutes.
Spoon the egg gravy generously over warm biscuits and sprinkle extra black pepper on top.
