This simple yet delicious root vegetable bake was taught to me by an older Amish woman, and it has quickly become a go-to recipe for spring dinners. With just four ingredients, it’s easy to prepare and packs a lot of flavor. Here’s how to make it:

Ingredients:

  • 4 large carrots, peeled and cut into chunks
  • 4 medium potatoes, peeled and cut into cubes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Place the cut carrots and potatoes in a baking dish.
  3. Drizzle the olive oil over the vegetables and toss them well to ensure they’re evenly coated.
  4. Sprinkle with salt and pepper to taste.
  5. Roast in the oven for about 30-40 minutes, or until the vegetables are tender and lightly browned, stirring halfway through.
  6. Remove from the oven, serve, and enjoy!
