Chewy Gooey Bars

These look like classic jam bars (shortbread jam squares) – buttery layers with a sweet fruit filling in the middle and a golden top.

Here’s a simple homemade recipe 👇

🍓 Buttery Jam Bars (Jam Shortbread Squares)

🧾 Ingredients

For the dough:

  • 2 ½ cups (315 g) all-purpose flour
  • 1 cup (225 g) unsalted butter, softened
  • ¾ cup (150 g) sugar
  • 1 egg
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • Pinch of salt

For the filling:

  • 1 to 1 ½ cups thick jam (strawberry, raspberry, apricot, or plum)

👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C).
Line a 9×13-inch (23×33 cm) baking pan with parchment paper.
  2. Make the dough
    • Cream butter and sugar until light and fluffy.
    • Add egg and vanilla; mix well.
    • In another bowl, combine flour, baking powder, and salt.
    • Gradually mix dry ingredients into the butter mixture until a soft dough forms.
  3. Divide the dough
    • Press about 2/3 of the dough evenly into the bottom of the prepared pan.
    • Spread jam evenly over the base (leave a small border around edges).
  4. Top layer
    • Crumble or flatten the remaining dough and gently place it over the jam (you can cover fully or leave slight gaps).
  5. Bake
Bake for 30–40 minutes, or until the top is golden brown.
  6. Cool completely
Let cool in the pan before slicing into squares.

✨ Tips

  • Use thick jam so it doesn’t run.
  • For extra flavor, add lemon zest to the dough.
  • Sprinkle sliced almonds on top before baking for a crunchy finish.
