  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 cup corn kernels (fresh or frozen)

  • 2 tbsp butter (for mashed potatoes)
  • Salt and pepper, to taste

Instructions:

  1. Prepare the potatoes: Wash and scrub the russet potatoes. Pierce each one with a fork and bake at 400°F (200°C) for 45-60 minutes, until tender. Alternatively, you can microwave the potatoes for 8-10 minutes, flipping halfway through.
  2. Cook the ground beef: While the potatoes bake, heat the olive oil or butter in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
