Chile Verde Sopita Recipe
This delicious and comforting soup combines tender pieces of meat, hearty pasta, and a flavorful green chili broth. It’s perfect for a cozy dinner or a satisfying lunch.
Ingredients:
- 1 lb of ground beef or pork (or a mix)
- 1 onion, diced
- 1 bell pepper, diced
- 2-3 cloves garlic, minced
- 2 cups of green chilies (canned or roasted, diced)
- 2 cups of diced tomatoes (fresh or canned)
- 4 cups of chicken broth
- 1 ½ cups of small pasta (like elbow macaroni)
- 1 tsp of cumin
- 1 tsp of oregano
- Salt and pepper to taste
- 1 tbsp of olive oil
- 1 cup of heavy cream (optional for creaminess)
- Fresh cilantro for garnish (optional)
Instructions:
- Cook the Meat: In a large pot, heat the olive oil over medium heat. Add the ground meat and cook until browned. Use a spoon to break the meat into small pieces. Drain any excess fat.
- Sauté the Vegetables: Add the diced onion, bell pepper, and garlic to the pot with the meat. Sauté for about 5 minutes, until the vegetables soften.
- Add the Chilies and Tomatoes: Stir in the green chilies and diced tomatoes. Cook for an additional 2 minutes.
- Simmer: Pour in the chicken broth, and bring the mixture to a boil. Reduce the heat and let it simmer for about 20-25 minutes to allow the flavors to combine.
- Cook the Pasta: Add the pasta to the soup and cook according to the package instructions until tender, about 8-10 minutes.
- Finish the Soup: Season with cumin, oregano, salt, and pepper to taste. For a creamier version, add the heavy cream and stir well.
- Serve: Ladle the soup into bowls and garnish with fresh cilantro if desired.
