Ingredients:

  • 1 lb of ground beef or pork (or a mix)
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2-3 cloves garlic, minced
  • 2 cups of green chilies (canned or roasted, diced)
  • 2 cups of diced tomatoes (fresh or canned)
  • 4 cups of chicken broth
  • 1 ½ cups of small pasta (like elbow macaroni)
  • 1 tsp of cumin
  • 1 tsp of oregano
  • Salt and pepper to taste
  • 1 tbsp of olive oil
  • 1 cup of heavy cream (optional for creaminess)
  • Fresh cilantro for garnish (optional)

Instructions:

  1. Cook the Meat: In a large pot, heat the olive oil over medium heat. Add the ground meat and cook until browned. Use a spoon to break the meat into small pieces. Drain any excess fat.
  2. Sauté the Vegetables: Add the diced onion, bell pepper, and garlic to the pot with the meat. Sauté for about 5 minutes, until the vegetables soften.

  6. Finish the Soup: Season with cumin, oregano, salt, and pepper to taste. For a creamier version, add the heavy cream and stir well.
