2 lbs (about 1 kg) potatoes (Yukon Gold or Russet)

3 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon paprika

1 teaspoon garlic powder

½ teaspoon dried oregano or Italian seasoning

Cheesy topping

1½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Optional toppings (highly recommended)

Chopped fresh parsley or green onions

Chili flakes (optional)

Sour cream or garlic sauce for dipping

Instructions

Prep the potatoes

Preheat oven to 400°F (200°C).

Wash potatoes and cut into thin slices or wedges (don’t peel unless you want to).

Season

Place potatoes in a large bowl.

Add olive oil, salt, pepper, paprika, garlic powder, and oregano.

Toss until evenly coated.

Bake until crispy

Spread potatoes in a single layer on a lined baking sheet.

Bake for 30–35 minutes, flipping halfway, until golden and crispy.

Add the cheese

Remove from oven.

Melt & finish
