Ingredients
3 jalapenos (diced and seeded)
1/2 cup chopped yellow onion
2 tablespoons minced garlic
2 tablespoons avocado oil
14.5 ounces fire-roasted tomatoes
6 cups chicken broth
2 chicken breasts
1 can pinto or black beans
1 bag frozen Corn
Jack Cheese

In a pot, add 2 tablespoons of avocado oil. Heat the oil and add the onion.Sauté the onions for 1 minute then add the jalapenos and garlic. Cook for 2 minutes then add broth, tomatoes, beans and corn. Heat until boiling and then add the chicken. Cook for 25 minutes and then shred the chicken. Add lime juice, tortilla chips, cilantro and jack cheese per serving.
