Ingredients

For the Steak Bites

  • 700 g beef steak, cut into bite-sized cubes
  • 1½ tablespoons olive oil
  • 4 tablespoons butter
  • 5 garlic cloves, finely minced
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ¾ teaspoon salt, or to taste
  • ½ teaspoon dried Italian herbs
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon Worcestershire sauce, optional
  • ½ teaspoon chili flakes, optional

For the Fries

  • 4–5 large potatoes
  • 2 tablespoons vegetable or olive oil
  • Salt, to taste
  • ½ teaspoon paprika, optional
  • Black pepper, to taste

Instructions

1. Prepare the Potatoes

Wash and peel the potatoes if desired. Cut them into evenly sized fries so they cook at the same rate.

Place the fries in a large bowl of cold water and let them soak for at least 20–30 minutes. This helps remove excess starch and can make the finished fries crispier.

Drain the potatoes and dry them extremely well using a clean kitchen towel or paper towels. Excess moisture will prevent them from becoming properly crisp.

Toss the potatoes with oil, salt, and a little paprika if desired.

For oven fries, spread them in a single layer on a baking sheet and bake at 220°C (425°F) for approximately 30–40 minutes, turning halfway through.

For air-fryer fries, cook at approximately 200°C (400°F) for 15–25 minutes, shaking several times during cooking.

2. Prepare the Steak

Cut the steak into roughly 3–4 cm cubes. Sirloin, ribeye, strip steak, or another tender beef cut works particularly well.

Pat the steak pieces very dry with paper towels. This is an important step because dry meat develops a much better browned crust.

Season the beef with salt, black pepper, paprika, onion powder, and Italian herbs. Toss everything together until the pieces are evenly coated.

3. Sear the Steak

Heat a large heavy skillet over medium-high to high heat. Add the olive oil and allow it to become hot.

Place the steak pieces in the pan in a single layer. Avoid overcrowding the skillet; if necessary, cook the beef in two batches.

Let the steak cook undisturbed for about 2 minutes before turning the pieces. Continue searing, turning occasionally, until the outside develops a deep golden-brown crust and the steak reaches your preferred doneness.

Remove the steak from the skillet and place it on a plate.

4. Make the Garlic Butter Sauce

Reduce the heat to medium.

Add the butter to the same skillet. Once melted, add the minced garlic.

Cook for approximately 30–60 seconds, stirring constantly. Be careful not to burn the garlic.

Add Worcestershire sauce and chili flakes if using. Stir everything together, allowing the browned bits from the bottom of the pan to mix into the butter.

Return the steak bites to the skillet and toss them thoroughly in the garlic butter.

Cook for another 1–2 minutes so the beef becomes coated with the sauce.

Finish with freshly chopped parsley.

5. Serve

Arrange the crispy fries on a large serving plate or platter.

Pile the garlic butter steak bites generously over the fries. Spoon any remaining garlic butter from the skillet over the steak.

For extra flavor, sprinkle with additional fresh parsley and a little freshly cracked black pepper.

Tips for Tender Steak Bites

Choose the right beef. Ribeye gives especially rich results because of its marbling, while sirloin provides a leaner option.

Do not overcrowd the pan. Too much meat at once lowers the temperature and causes the steak to steam instead of sear.

Dry the steak first. Moisture on the surface makes it harder to achieve that dark, caramelized crust.

Use a very hot skillet. High heat helps create the delicious browned exterior shown in the photo.

Don’t overcook the steak. Small pieces cook quickly, so keep a close eye on them.
